The last of the eggplant

Before the "wintry mix" and devastating storm came and took them all down.  Awwww, but wait, there is next year and we are looking forward yet again to Eggplant parmesan, Caponata, Roasted Eggplant,etc.  But for right now, we are enjoying lots of vitamin loaded greens.  The root vegetables are going to be planted next week, mainly potatoes.  The carrots are already sprouting and the beets have been coming in sporadically.  We placed an order for parsnips this week and horseradish.  We have not tried them here in awhile.  Going with a different variety this time, we will see how it works.
