Yes, there are some folks who do not know this...
So, if you do, you can skip this post. We have lots of folks who call us and want tomatoes in the winter and these lovely cabbages in the summer. We do have a lovely growing season here in zone 8b. However, plants have limitations. They are like people. They need conditions around them to be at their optimal best before they can grow. Seeds require certain germination conditions and plants need the conditions to be the ones they like before they can grown. Right now, it is flower loving season. This means that all the plants that flower, do so in this heat loving season of summer. These include tomatoes, okra, squashes, melons, cucurbits (cucumber types), edible flowers, and peppers. We can adjust and create climates that the other types love as well, but it is not a natural environment and requires extra costs to control the climate, etc. (Think a/c indoors for microgreens, etc). It can be done, but it is seriously labor intensive. So, we just thrive on seasonal produce. Lots of NY times best selling author/doctors are advocating this lately. Dr. Josh Axe, Dr. Perlmutter and Dr. Daniel Amen to mention a few.
