Probably the last of the spinach for the season

We love spinach around here and we are sad when it is warmer weather and the spinach bolts (goes to seed),  However, we look forward to the fruiting vegetables and fruits which cool us off and refresh us.  So, on our spinach BLTs we will have fresh parsley and tomatoes on our BLTs.  It is nice to eat with the seasons once you learn how to appreciate what is growing.
