Radishes
Around here, we love radishes. They are crisp, they are peppery and they have a nice zip to them. I didn't realize until we started eating seasonally, that radishes were much more versatile than simply being tossed with lettuce in a salad. Have you tried using the tops in pesto instead of basil? A great way to eat them is sliced thinly and fermented with sea salt and filtered water. Talk about a punch of probiotics! Try them braised in butter or ghee and sea salt. Slice them thinly with pea shoots on a sandwich with hummus. How do you eat them? Whatever you do, eat the tops and the roots!
