I love leeks.

King Richard leeks are super food in my honest opinion.  They serve as a diuretic when stewed with lots of water.

Leeks are an excellent source of vitamin K. They are very good source of manganese, vitamin B6, copper, iron, folate and vitamin C. Leeks are also a good source of vitamin A (in the form of carotenoids, dietary fiber, magnesium, vitamin E, calcium and omega-3 fatty acids. (taken from whfoods.com)

They have a mild taste and can be added into most any entree casserole dish.  Slice them up for salads, put in soups, put on baked potatoes like chives.

These will be ready within two weeks or so. See that sunflower in the middle?  Yep, it's messing up the picture.  No, we won't remove it.  It's called a trap crop.  We will do a full blog post on trap crops soon.  We love sunflowers and zinnias to attract pollinators also.  It is time for those fruiting vegetables, like cucumbers, tomatoes, squashes and okra.  They need pollinators.

Eat your leeks, they are good for you.

Until next time...
